Orange-Chocolate Cake recipe

This moist cake is lower in fat becauseorange juice replaces part of the oil.

Recipe: Orange-ChocolateCake

Nonstick spray coatingUnsweetened cocoa powder1 (18.25-ounce) package 2-layer-size devil’sfood cake mix1 (8-ounce) carton plain low-fat ornonfat yogurt2 tablespoons finely shredded FloridaOrange Peel (set aside)1/2 cup Florida Orange Juice1/2 cup water1 large egg2 large egg whites2 tablespoons vegetable oil1 teaspoon ground cinnamonChocolate Icing (recipe follows)Orange Icing (recipe follows)

  • Spray a 10-inch fluted tube pan or a 13x 9 x 2-inch baking pan with nonstick coating; dust with unsweetenedcocoa powder. Set aside.
  • In a large mixing bowl combine cake mix,yogurt, orange juice, water, egg, egg whites, cooking oil, andcinnamon. Beat with an electric mixer on low speed for 4 minutes.Stir in orange peel. Pour into prepared pan.
  • Bake in a 350°F (175°C) oven for40 to 50 minutes for tube pan or 35 to 40 minutes for a 13 x9 x 2-inch baking pan or until a wooden pick inserted near thecenter comes out clean. Cool in pan on a wire rack 10 minutes.Remove cake from tube pan or leave in 13 x 9 x 2-inch pan; coolcompletely. Drizzle icings over cake.
  • For Chocolate Icing: In a small bowl combine1/2 cup sifted powdered sugar, 1 tablespoon unsweetened cocoapowder, 2 teaspoons Florida Orange Juice, and 1/4 teaspoon vanillaextract. Stir in enough additional Florida Orange Juice to makea drizzling consistency. Makes about 2 tablespoons.
  • For Orange Icing: In a small bowl combine1/2 cup sifted powdered sugar, 1 teaspoon Florida Orange Juice,and 1/4 teaspoon vanilla extract. Stir in enough additional FloridaOrange Juice to make a drizzling consistency. Makes about 2 tablespoons.

    Makes 12 servings.

    I’ve made this at leat a dozen times, always great cake and everyone who tries it loves it. My partner took some to work for her friends and now i’m getting orders for it. I always top the cake with mandarin segments, the fresh fruitiness combats the richness of the chocolate and cream. Love the new look or think we’ve missed the mark?
