Onion Quiche recipe

A quiche that looks gourmet but is easyto prepare. Grated Swiss cheese fills the bottom of a pie shell,covered with a pimiento, egg mixture then topped with layersof sliced onions. Delicious!

Recipe: Onion Quiche

1/2 pound shredded Swiss cheese
1/2 of a (2.4-ounce) package dry onion soup mix
3 large eggs
1 1/4 cups milk
1 tablespoon chopped parsley
1 tablespoon chopped pimiento
1/2 cup onion, sliced
1 (9-inch) unbaked pie shell

  • Sprinkle shredded Swiss cheese on thebottom of a 9-inch unbaked pie shell.
  • In a bowl with an electric mixture onmedium speed, combine dry onion soup mix, eggs, milk, choppedparsley, and chopped pimiento; beat well. Pour over the cheesein the pie shell. Layer sliced onion on top.
  • Bake at 350°F (175°C) for 40 minutes.Cool slightly before slicing.

    Makes 8 servings.

    This is a very easy quiche. I serve it for breakfast when I have guests with muffins and fresh fruit.
