Onion-Apricot Confit recipe

This dark, sweet relish — made with caramelized,slow-cooked onions, sweet raisins, and tart apricots — is awonderful accompaniment to roasted meats or root vegetables.

Recipe: Onion-Apricot Confit

1 tablespoon butter
2 medium onions, sliced
4 ounces raisins
4 ounces dried apricots, chopped
1 cup beef broth
1 tablespoon packed brown sugar
1 1/2 teaspoons cider vinegar
1/4 teaspoon ground ginger

  • Melt butter over medium-low heat in heavysaucepan; add onions and cook for 20 minutes or until soft andstarting to brown, stirring occasionally.
  • Stir in raisins, apricots, broth, sugar,vinegar and ginger. Cover, reduce heat to low and simmer, stirringoccasionally, for 20 minutes or until fruit is soft.
  • Chill; serve as a relish with meats.

    Makes 8 servings.
