This dark, sweet relish — made with caramelized,slow-cooked onions, sweet raisins, and tart apricots — is awonderful accompaniment to roasted meats or root vegetables.
Recipe: Onion-Apricot Confit
1 tablespoon butter
2 medium onions, sliced
4 ounces raisins
4 ounces dried apricots, chopped
1 cup beef broth
1 tablespoon packed brown sugar
1 1/2 teaspoons cider vinegar
1/4 teaspoon ground ginger
Makes 8 servings.
