Old World Raspberry Bars recipe

An old-fashioned cookie bar with a raspberrypreserve filling and crumb topping.

Recipe: Old World RaspberryBars

Crumb Mixture:2 1/2 cups all-purpose flour1 cup granulated sugar1 cup chopped pecans1 cup butter, softened1 large eggFilling:1 (10-ounce) jar raspberry preserves

  • Preheat oven to 350°F (175°C).
  • For Crumb Mixture: In large mixing bowlcombine all crumb mixture ingredients. With an electric mixer,beat at low speed, scraping bowl often, until mixture is crumbly,2 to 3 minutes.
  • Reserve 1 1/2 cups crumb mixture; pressremaining crumb mixture on bottom of greased 8-inch square bakingpan.
  • For Filling: Spread raspberry preservesto within 1/2-inch from edge of unbaked crumb mixture.
  • Crumble reserved crumb mixture over preserves.
  • Bake for 42 to 50 minutes or until lightlybrowned. Cool completely. Cut into bars.

    Makes 2 dozen bars.
