These crispy coconut cookies are firstshaped into little logs and then pressed flat with a fork tolook like old-fashioned ‘washboards’.
Recipe: Old-Time CoconutWashboards
4 3/4 cups all-purpose flour1 1/2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon salt1/2 cup butter or margarine1/2 cup vegetable shortening2 cups firmly packed light brown sugar2 large eggs1/4 cup buttermilk1 cup sweetened flaked coconut
In a medium bowl, whisk together the flour,baking powder, baking soda and salt; set aside.
In a large mixing bowl, using an electricmixer at medium speed, cream together butter, shortening andbrown sugar until light and fluffy; add eggs blend well. Stirin flour mixture alternately with the buttermilk until just mixed.Fold in coconut. Cover and chill for a minimum of 2 hours.
Preheat oven to 375°F (190°C).
Shape level tablespoons of dough into2 1/2-inch logs. Place 2-inches apart onto ungreased baking sheets.Firmly press logs lengthwise with a fork dipped in flour to flatten.
Bake for 8 to 10 minutes or until lightlybrowned. Transfer to wire racks tocool completely.
Makes about 7 dozen.
