Old South Prune Cake recipe

This is truly a delicious chocolate cake,made richer and moist by the prunes.

Recipe: Old South Prune Cake

1 cup vegetable oil1 1/2 cups granulated sugar3 large eggs1 cup buttermilk1 teaspoon vanilla extract1 teaspoon ground allspice1 teaspoon ground nutmeg1 teaspoon ground cinnamon1 teaspoon baking soda1/4 teaspoon salt2 cups all-purpose flour1 cup cooked mashed prunes1 cup chopped nutsThe Sauce:1 cup granulated sugar1/2 cup buttermilk1/2 teaspoon baking soda1 tablespoon light corn syrup orhoney1/2 cup butter

  • Preheat oven to 350°F (175°C).Grease and flour a 9 x 13 x 2-inch pan.Set aside.
  • Mix all ingredients and blend well. Pourinto prepared pan and bake for 35 to45 minutes, or until cake springs back when pressed in the center.
  • Remove from oven. Pour sauce over topof hot cake immediately.
  • For The Sauce: Combine all ingredientsin a large saucepan. Cook until butter ismelted. Boil for 3 minutes, stirring constantly.
  • Pour over cake as soon as it comes outof the oven.

    Makes 12 servings.
