Old Fashioned Chocolate Cake recipe

A good basic, old fashioned chocolate cake.

Recipe: Old Fashioned ChocolateCake

2 2/3 cups cake flour
3 teaspoons baking powder
3/4 teaspoon salt5 (1-ounce) squares unsweetened bakingchocolate, broken into pieces
1/2 cup water
3/4 cup butter, softened
2 1/4 cups granulated sugar
6 large eggs, separated
2 teaspoons vanilla extract
3/4 cup milk

  • Heat oven to 350°F (175°C). Greaseand flour 13 x 9 x 2-inch baking pan.
  • In a medium bowl, mix together flour,baking powder and salt; set aside.
  • In a small saucepan, combine chocolateand water and cook over low heat, stirring occasionally, untilchocolate is melted. Set aside to cool slightly.
  • In a large mixing bowl, beat butter andsugar until light and fluffy; add egg yolks and vanilla and beatwell. Add cooled chocolate mixture and beat until blended.
  • Add flour mixture alternately with milkto the butter/chocolate mixture.
  • In a medium bowl, beat egg whites untilstiff, but not dry; fold into batter. Pour batter into preparedpan.
  • Bake 45 to 50 minutes or until woodenpick inserted in center comes out clean. Cool completely in panon wire rack.
  • Frost as desired.

    Makes 12 to 15 servings.

    I made this chocolate cake this week – my very first attempt at chocolate cake and it was absolutely delicious – brought the cake into my work since it was my birthday and everyone agreed that it was really tasty and light – I would recommend this recipe if you want to try baking chocolate cake for the first time and every time after that after you taste it. Thank you Nigella! made this today,but icing is not so good,icing sugar was lumpy,grainy ?Tried to blitz,but the processor on Kenwood Prospero mixer not very adept,should have sifted the sugar.Had to mix the cake in bowl rather than processor as this is too small . The cakes have turned out beautifully though.
