Yummy, citrus-scented oatmeal raisin cookies.
Recipe: Oatmeal SunshineCookies
1 cup all-purpose flour1/2 teaspoon baking soda1/2 teaspoon salt1/2 cup butter, softened1 cup firmly packed brown sugar1 large egg1 tablespoon grated orange or lime peel2 tablespoons orange or lime juice1 1/2 cups old-fashioned rolled oats1/2 cup cup raisins1/4 cup chopped pecans or walnuts
Preheat oven to 350°F (175°C).In small bowl, combine flour, baking soda and salt; set aside.
Cream butter; gradually add sugar, beatingat medium speed of an electric mixer until light and fluffy.Add egg and beat well. Stir in flour mixture just until combined;add peel, juice, oats, raisins and chopped nuts, and stir justuntil mixed.
Drop dough by rounded teaspoonfuls ontogreased baking sheets.
Bake for 10 to 12 minutes or until lightlybrowned.
Let cool slightly on baking sheets; removecookies to wire racks to cool completely.
Makes 4 dozen cookies.
