Oatmeal Sunshine Cookies recipe

Yummy, citrus-scented oatmeal raisin cookies.

Recipe: Oatmeal SunshineCookies

1 cup all-purpose flour1/2 teaspoon baking soda1/2 teaspoon salt1/2 cup butter, softened1 cup firmly packed brown sugar1 large egg1 tablespoon grated orange or lime peel2 tablespoons orange or lime juice1 1/2 cups old-fashioned rolled oats1/2 cup cup raisins1/4 cup chopped pecans or walnuts

  • Preheat oven to 350°F (175°C).In small bowl, combine flour, baking soda and salt; set aside.
  • Cream butter; gradually add sugar, beatingat medium speed of an electric mixer until light and fluffy.Add egg and beat well. Stir in flour mixture just until combined;add peel, juice, oats, raisins and chopped nuts, and stir justuntil mixed.
  • Drop dough by rounded teaspoonfuls ontogreased baking sheets.
  • Bake for 10 to 12 minutes or until lightlybrowned.
  • Let cool slightly on baking sheets; removecookies to wire racks to cool completely.

    Makes 4 dozen cookies.
