The dough must be refrigerated severalhours prior to baking these thin, crispy oatmeal cookies.
Recipe: Oatmeal Crispies
3 cups quick-cooking oats1 1/2 cups all-purpose flour1 teaspoon baking soda1 teaspoon salt1 cup vegetable shortening
1 cup firmly packed brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
plastic wrap, approximately 1 1/2-inch in diameter. Chill forseveral hours or overnight. (Dough can be frozen and baked ata later date.)
Makes about 3 1/2 dozen cookies.
