Chewy oatmeal cookies laced with coconutand pecans.
Recipe: Oatmeal Coconut Cookies
2 1/2 cups all-purpose flour1 teaspoon baking soda1 teaspoon baking powder1/4 teaspoon salt1 cup butter, softened1 cup firmly packed brown sugar
Preheat oven to 350°F (175°C).
Combine flour, baking soda, baking powderand salt in medium bowl; set aside.
In large mixing bowl, cream together butterand sugars until fluffy. Beat in eggs and vanilla until wellblended. Mix in reserved flour mixture, blending well. Stir oats,coconut, and nuts until just mixed.
Roll into balls the size of a walnut andplace 2-inches apart on ungreased baking sheets. Slightly flattenand bake for 8 to 10 minutes. Transfer to wire racks to coolcompletely. Store in tightly sealed contaier.
1 cup granulated sugar
2 large eggs1 teaspoon vanilla extract
1 cup old-fashioned rolled oats
1 cup sweetened flaked coconut1 cup chopped pecans or walnuts
Makes about 4 dozen cookies.
