A deliciously dense, yet moist oatmealcake with a broiled nutty coconut topping.
Recipe: Oatmeal Cake
2 1/2 cups boiling water2 cup uncooked oats
Pour water over oats, cover and let standfor 20 minutes.3 cups all-purpose flour2 teaspoons baking soda1 teaspoon salt2 teaspoons ground cinnamon1/2 teaspoon ground nutmeg1 cup butter2 cups granulated sugar2 cups packed brown sugar2 teaspoons water4 large eggsTopping:1/2 cup butter1 cup packed brown sugar5 teaspoons heavy cream2/3 cup nuts1 1/2 cups flaked coconut
In medium bowl, combine flour, bakingsoda, salt, cinnamon and nutmeg; set aside.
In large mixing bowl, beat 1 cup butterand sugar and 2 cups brown sugar with electric mixer until creamy;add the water and eggs and beat well. Add the oatmeal mixtureand blend well. Mix in flour mixture, mixing well.
Pour into greased 13 x 9 x 2-inch bakingpan and bake in 350°F (175°C) oven for 50 to 55 minutesor until wooden pick inserted in center comes out clean. Removecake from oven and spread with Topping while still warm. Placeunder broiler until topping is bubbly. Cool.
For Topping: Combine topping ingredientsuntil crumbly.
Makes 12 servings.
