Oatmeal-Brown Sugar Pancakes recipe

Send the kids off to school fortified witha hearty breakfast of brown sugar-sweetened oatmeal pancakes.

Recipe: Oatmeal-Brown SugarPancakes

1 large egg1 cup milk2 tablespoons vegetable oil1 cup all-purpose flour1 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt1/4 cup brown sugar, packed1/2 cup quick-cooking oats, uncooked

  • Beat egg; add milk and oil, mixing well.
  • Combine flour and next 4 ingredients;add to egg mixture, mixing until blended. Stir oats into batter.
  • Heat a lightly greased griddle or skilletover medium heat (375°F / 190°C). Griddle is ready whena few drops of water bubble and skitter rapidly around.
  • For each pancake, pour scant 1/4 cup batteronto hot griddle. Cook pancakes until surface is covered withbubbles and appear dry around the edges. Turn and cook otherside until golden brown.

    Makes about 10 (4-inch) pancakes.
