Oat-laden cookie bars studded inside andon top with toffee chips.
Recipe: Oat Toffee Bars
1 cup butter, softened
Heat oven to 350°F (175°C). Grease13 x 9 x 2-inch baking pan; set aside.
Beat butter and brown sugar in large bowluntil well blended. Add eggs and vanilla; beat well.
Stir together flour, baking soda, cinnamonand salt. Gradually add to butter mixture, beating until blended.
Set aside 1/2 cup toffee chips.Stir remaining chips and oats into batter(batter will be stiff).
Spread batter into prepared pan; sprinklereserved 1/2 cup chips over surface.
Bake 25 minutes or until wooden pick insertedin center comes out clean. Cool completely in pan on wire rack.Cut into bars.
1 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/3 cup toffee chips – divided use
3 cups quick or old fashioned oats
Makes 36 bars.
