Chocolate and coffee-flavored brownieswith oatmeal mixed in.
Recipe: Oat-Mocha Brownies
1/2 teaspoon instant coffee granules1/4 cup water1/2 cup butter1/4 cup baking cocoa1/4 cup quick-cooking oats2 large eggs3/4 cup granulated sugarDash of salt1 tablespoon vanilla extract3/4 cup all-purpose flour1/2 teaspoon baking powder
Combine coffee granules and water in aheavy saucepan; stir until granules dissolve. Add butter andcocoa; cook over low heat until butter melts and mixture is smooth,stirring constantly. Stir in oats; remove from heat. Allow tocool.
Beat egg; gradually add sugar, beatingconstantly with a wire whisk until smooth and slightly thickened.Stir in chocolate mixture, salt, and vanilla. Combine flour andbaking powder; stir into chocolate mixture and mix well.
Spoon batter into a lightly greased 9-inchsquare baking pan.
Bake at 350°F (175°C) for 20 minutesor until a wooden pick inserted in center comes out clean. Cooland cut into squares.
Makes 16 brownies.
