Oak Glen Apple Cake recipe

This moist and delicious, honey-sweetenedapple cake is wonderful served as is, but even more so with adollop of lightly sweetened whipped cream or a scoop of vanillaice cream.

Recipe: Oak Glen Apple Cake

1/4 cup butter or margarine
2/3 cup honey
1 large egg
1 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup wheat germ
2 cups apple, finely diced, unpared
1/2 cup walnuts, choppedWhipped cream or vanilla ice cream foraccompaniment (optional)

  • Preheat oven to 350°F ( 175°C).Grease an 8 or 9-inch square baking pan; set aside.
  • In large bowl, cream butter. Graduallyadd honey and beat thoroughly.
  • In separate bowl, combine flour, bakingsoda, spices and wheat germ. Add apple and nuts. Stir flour mixtureinto honey mixture until well blended.
  • Spread batter evenly in prepared bakingpan.
  • Bake for 40 to 45 minutes or until caketests done.
  • Serve with whipped cream or vanilla icecream, if desired.
