North Beach Pork Bocconcini recipe

‘Little bites’ redolent of Mediterraneanflavors become an easy favorite for hot appetizers. North Beachis the renowned San Francisco Italian neighborhood.

Recipe: North Beach PorkBocconcini

2 pounds boneless pork loin, cut into3/4-inch cubes
3/4 cup cider vinegar
3/4 cup olive oil
4 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon oregano
1 teaspoon thyme
2 garlic cloves, minced
2 teaspoons black pepper
1 teaspoon salt
1/2 teaspoon cayenne

  • Place all ingredients in a 1-gallon self-sealingplastic bag, mix well. Seal bag and marinate in the refrigerator8 to 12 hours or overnight.
  • Heat oven to 350°F (175°C).
  • Remove pork cubes from marinade, discardingmarinade. Pat pork dry with paper toweling; place cubes in asingle layer, not touching, in a shallow baking pan and bakeat 350°F (175°C) for 25 to 30 minutes, until pork isjust tender and lightly browned.
  • Remove to serving platter or chafing dishand serve hot.
