No-Chocolate Cola Cake recipe

A delicious twist on the average chocolatecola cakes, this one uses a yellow cake mix with vanilla puddingmix, coconut and pecans, and is iced with a luscious cream cheesefrosting.

Recipe: No-Chocolate ColaCake

1 (18.25-ounce) package yellow cake mix
1 (3.5-ounce) package instant vanilla pudding mix
1/2 cup vegetable oil
1 cup shredded coconut
1 cup chopped pecans
1 (12-ounce) can cola-flavored soda
4 large eggs
1/2 cup butter
1 (8-ounce) package cream cheese, softened
2 cups powdered sugar, sifted

  • Preheat oven to 350°F (175°C).Grease and flour a Bundt cake pan.
  • In a large mixer bowl, combine yellowcake mix, instant vanilla pudding mix, oil, coconut, pecans,soda and eggs; mix well.
  • Pour batter into prepared pan and bakefor 50 to 60 minutes, or until a wooden pick comes out cleanwhen inserted in the center of cake. Remove from oven and coolin pan for 10 minutes. Remove from pan and cool completely ona wire rack.
  • Frosting: In a medium bowl, cream togetherbutter with softened cream cheese. Gradually beat in powderedsugar until smooth and fluffy. Frost the cooled cake.

    Makes 12 servings.
