No-Bake Chocolate Cake Roll recipe

This old-fashioned no-bake chocolate rollhas been a favorite for years…make it and you’ll taste why.

Recipe: No-Bake ChocolateCake Roll

1 cup heavy or whipping cream1/3 cup powdered sugar1 teaspoon vanilla extract1 (3.25-ounce) package white chocolateor vanilla instant pudding and pie filling mix
3 tablespoons unsweetened cocoa powder – divided use
1 cup milk
1 (9-ounce) package crisp chocolate wafersChocolate sprinkles for garnish (optional)

  • In a small bowl, beat heavy cream, powderedsugar and vanilla until stiff; set aside.
  • In another small bowl, stir together puddingmix and 2 tablespoons cocoa; add milk and beat on low speed ofmixer until smooth and thickened. Fold in 1 cup of the whippedcream, blending well.
  • Spread about a tablespoon of pudding mixtureonto top of each chocolate wafer and then stack 4 or 5 of the”pudding/wafers” on top of each other.
  • On a large sheet of foil, place the stackedwafers on their edges to make one long roll. Wrap tightly andrefrigerate several hours, or overnight.
  • Stir remaining 1 tablespoon cocoa intoremaining whipped cream
  • Unwrap roll; place on serving tray. Spreadwhipped cream mixture over entire roll. Garnish with chocolatesprinkles, if desired.
  • To serve, slice diagonally at 45 degreeangle. Refrigerate leftovers.

    Makes about 12 servings.
