No Bake Cheesecake recipe

A delicious no-bake vanilla and almond-scentedcheesecake with a graham cracker crust, topped with cherry orblueberry pie filling.

Recipe: No Bake Cheesecake

2 cups graham cracker crumbs
1/3 cup granulated sugar
1/2 cup butterFilling:
2 (1/4-ounce) envelopes unflavored gelatin
3/4 cup granulated sugar
1 cup boiling water
1 cup cream-style cottage cheese
2 (8-ounce) packages cream cheese, softened
1 cup whipping cream
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 (21-ounce) can cherry or blueberry pie filling

  • For Crust: Combine graham cracker crumbsand 1/3 cup sugar. Mix in butter thoroughly. Press firmly ontobottom and sides of a 9-inch spring-form pan. Chill crust.
  • For Filling: Mix unflavored gelatin withsugar. Add boiling water and stir until gelatin is completelydissolved.
  • Using an electric mixer, blend in thefollowing ingredients one at a time; cottage cheese, cream cheese,cream, vanilla and almond extract. Beat well after each addition.
  • Pour into prepared crust. Chill untilfirm.
  • Top with cherry or blueberry pie filling.

    Makes 12 servings.

    I made this! It s really good, just like baked cheesecake but creamier. Personally I ve never had much success with baked cheesecake so I m glad I found this. hi! love your blog and i have tried many different recipes with all good results! I am making a red velvet cake tomorrow and i wanted to use this as a separate layer. I do not have vanilla sugar can i just use reg sugar and vanilla? thank u
