New Era Guacamole recipe

A new era of avocado dip is introducedwith this recipe — guacamole with an Asian twist.

Recipe: New Era Guacamole

3/4 cup mashed ripe avocado (about 1 medium)1/2 cup grated fresh jicama1/3 cup frozen white corn kernels, thawed2 tablespoons minced green onions, whiteand green parts1 tablespoon minced fresh cilantro leaves1 teaspoon finely minced garlic1 tablespoon fresh lime juice, or to taste1 teaspoon Asian chili sauce*1/4 teaspoon salt

  • In a mixing bowl, combine avocado andjicama.
  • Add the corn kernels to the avocado alongwith the remaining ingredients. Mix thoroughly.

    Makes 1 1/2 cups

    *Look for Asian chili sauce, also labeled”chili paste with garlic” or “chili paste”in the Asian aisle of well-stocked supermarkets.

    When New York Times food columnist Melissa Clark posted a recipe for a kind of new wave guacamole, one that includes fresh peas, she thought it was innocent enough. “I do believe that in this world, there is room enough for pea guacamole, there’s room enough for regular guacamole,” she said. “We should try new things, right?”
