Never Fail Divinity recipe

A yummy, meringue-like confection…likea candy kiss from heaven!

Recipe: Never Fail Divinity

2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup hot water
1/4 teaspoon kosher or sea salt
2 large egg whites
1 teaspoon vanilla extract1/2 cup chopped toasted walnuts or pecans(optional)

  • Combine sugar, syrup, water and salt ina 3-quart saucepan. Cover pan and bring to a boil. Remove coverand cook, stirring occasionally, to hard ball stage (260°F| 125°C), or until a small amount of mixture is dropped intocold water and forms a ball that holds its shape but is pliable.
  • Meanwhile, beat egg whites in large mixingbowl until stiff. Gradually pour in hot syrup in small streamwhile continuing to beat. Add vanilla and continue beating untilmixture will hold its shape when dropped from spoon.
  • Drop by spoonfuls onto waxed paper orpour into a 13 x 9 x 2-inch baking pan lined with lightly butteredwaxed paper or aluminum foil. Cool; invert pan and peel off paper.Cut into squares.

    Makes about 48 pieces of candy.
