Native American Catfish with Pine Nuts recipe

American catfish fillets dredged in a spicyground pine nuts and cornmeal mixture, pan-fried and served witha sprinkling pine nuts.

Recipe: Native American Catfishwith Pine Nuts

1/4 cup ground pine nuts
1/2 cup cornmeal
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/4 cup vegetable oil
1 pound catfish fillets
2 tablespoons pine nuts

  • In a bowl combine ground pine nuts withcornmeal, flour, salt, cayenne pepper, and cumin.
  • Heat oil in a large, heavy skillet overmoderate heat. Dredge catfish fillets in the cornmeal mixtureand pan fry about 4 minutes per side, or until opaque. Sprinklewith pine nuts.

    Makes 4 servings.
