Named after the West-Coast city of Nanaimo,British Columbia, this layered bar is one of Canada’s favoriteand best known confections.
Recipe: Nanaimo Bars
Base:2 squares (2-ounces) semi-sweet chocolate2 cups graham cracker crumbs1 cup coconut1/2 cup softened butter1/2 cup chopped walnuts2 tablespoons granulated sugar1 teaspoon vanilla extract1 large egg
Combine ingredients. Press into 9-inchsquare cake pan. Chill.Filling:1/4 cup butter, softened3 tablespoons milk2 tablespoons instant vanilla pudding2 cups powdered sugar
Combine butter, milk, and custard powder.Blend in powdered sugar. Spread overbase. Chill at least 15 minutes.Glaze:4 squares (4-ounces) semi-sweet chocolate1 tablespoon butter
Partially melt chocolate and butter. Removefrom heat and stir until melted. Spreadover custard layer. Serve chilled.
Store in refrigerator, covered, up to1 month.
Makes 24 bars.
