Nacho-Style Soup.

Warm up with this fiesta-inspired soup,sure to satisfy on a chilly day. Top or stir in sliced greenonions, shredded cheese, zesty salsa or tortilla chips for aflavorful twist.

Recipe: Nacho-Style Soup

2 (12-ounce) cans NESTL ® CARNATION®Evaporated Lowfat 2% Milk
1 cup fat-free chicken broth
1/4 cup all-purpose flour
1/4 teaspoon cayenne pepper
2 cups (8-ounce package) shredded 2% cheddar cheese
Toppings: sliced green onions, additional shredded cheddar cheese,salsa and/or tortilla chips (optional)

  • Combine evaporated milk, broth and flourin medium saucepan over medium- high heat. Bring to a boil, stirringconstantly. Reduce heat to medium-low; cook, stirring constantly,for 5 minutes. Stir in cayenne pepper and cheese, 1/2 cup ata time, allowing each addition to be melted before adding morecheese. Remove from heat. Serve with desired toppings.

    Makes 4 (1 cup) servings.

    Thank you so much for adapting this. I looked up that link last Friday and the soup sounded good, but I didn t really want to use the processed, condensed cheese soup. So, I m glad to see this recipe and will print it out right away. This looks delicious! Would the soup still taste alright omitting the Rotel or would you substitute something else for it? Chunky tomatoes and I don t get along.
