Mozzarella and Green Bean Salad.

A refreshing, chilled Italian-style freshgreen bean salad with shredded mozzarella cheese, quartered cherrytomatoes, red onion rings, sliced black olives and fresh basiltossed in your favorite Italian dressing.

Recipe: Mozzarella and GreenBean Salad

2 cups fresh green beans, cooked crisp-tenderand drained
2 cups (8 ounces) shredded mozzarella cheese
1 cup cherry tomato quarters
1/4 cup torn fresh basil leaves
1 small red onion, cut into 1/8-inch rings
1 (2 1/4-ounce) can sliced black olives, drained
1/2 cup prepared Italian dressing

  • In a large bowl, combine all of the ingredients;mix well. Cover and refrigerate for 1 hour to blend the flavors.
  • Toss before serving.

    Makes 8 servings.

    Put the beans in a serving bowl, add the oil and vinegar dressing and stir everything together. Now’s good time to taste and adjust seasoning. Add the drained tomatoes, mozzarella, and cilantro and toss until well mixed.
