Mock Blintz recipe

Recipe: Mock Blintz

1 (8-ounce) package cream cheese, softened
1 large egg yolk
3/4 cup granulated sugar2 sticks (1 cup) margarine or butter1 (2-pound) loaf of sliced white bread
1 1/2 cups sugar mixed with 2 tablespoon ground cinnamon

  • Mix cheese, egg yolk and 3/4 cup sugartogether; set aside.
  • Trim the crust off the bread slices androll each out flat. Spread with the cream cheese mixture androll up; set aside.
  • Melt the butter in a bowl set aside.
  • Mix the 1 1/2 cups sugar and cinnamonin another bowl.
  • Dip the rolls first the in melted butterthen roll in the cinnamon/sugar mixture. Place into two generously-buttered13 x 9 x 2-inch baking pans.
  • Bake at 350°F (175°C) for 10 to12 minutes or until lightly browned.

    Makes about 24.

    This would be a great recipe for kids to help with. They ll love them when they are ready to eat too. The mock term is used because blintzes are usually made of crepes or a crepe like pancake. These are made with sliced white bread. Who knew plain old white bread could be dressed up so nicely?
