Mississippi Mud Cake recipe

Long a favorite cake recipe shared amongfamily and friends since the 1940’s, Mississippi Mud Cake isa decadently rich and dense chocolate nut sheet cake topped whilestill hot with a layer of miniature marshmallows which are coveredwith a cocoa buttercream frosting.

Recipe: Mississippi Mud Cake

Cake:1/2 cup butter, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
3/4 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
Dash salt
1 cup chopped pecans
6 cups (10 1/2-ounce package) miniature marshmallows
Cocoa Buttercream Frosting:6 tablespoons butter, softened
2 2/3 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/3 cup milk
1 teaspoon vanilla extract

  • Heat oven to 350°F (175°C). Grease13 x 9 x 2-inch baking pan.
  • For Cake: Beat butter, sugar and vanillain large bowl until creamy. Add eggs, one at a time, beatingwell after each addition.
  • Stir together flour, cocoa, baking powderand salt; blend into butter mixture. Stirin pecans. Spoon batter into prepared pan.
  • Bake 18 minutes or until top springs backwhen touched lightly in center.
  • For Cocoa Buttercream Frosting: In mediumbowl, beat butter, powdered sugar, cocoa, milk and vanilla tospreading consistency, adding 1 teaspoon of milk if needed.
  • Remove cake from oven; immediately placemarshmallows over top. Return cake to oven 2 to 3 minutes oruntil marshmallows are soft. Gently spread marshmallows overcake; immediately spread frosting over marshmallow layer. Coolthoroughly before cutting cake into squares.

    Makes 12 servings.

    Bake at 350° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; top warm cake evenly with marshmallows. Return to oven, and bake 5 minutes. Drizzle Chocolate Frosting over warm cake. Cool completely.
