Miniature Shoofly Pies recipe

It has been said that this pie’s name cameabout because the pie was so sugary sweet it attracted the flies…thusthe name ‘shoofly’. Here’s an easy mini-tart version.

Recipe: Miniature ShooflyPies

1 cup butter, softened
2 (3-ounce) packages cream cheese, softened
2 cups all-purpose flour
2 large eggs
1 1/2 cups firmly packed brown sugar
2 tablespoons butter, melted
1/4 teaspoon vanilla extract
1 cup granulated sugar
1 1/2 cups all-purpose flour
1/2 cup butter

  • In a mixer bowl using an electric mixeron medium speed, cream 1 cup softened butter and cream cheeseuntil light and fluffy. Add 2 cups flour and mix well.
  • Shape into 16 balls and press each overthe bottom and sides of a miniature muffin tin. Combine eggs,brown sugar, 2 tablespoons melted butter, and vanilla in a bowl;mix well. Spoon into the muffin cups.
  • In a bowl, combine sugar and 1 1/2 cupsflour. Cut in 1/2 cup butter until crumbly. Sprinkle over thetart filling then bake at 400°F (205°C) for 20 minutes.

    Makes 16 servings.
