Mini Spring Cheesecakes.

You don’t have to search the backyard forthis hidden treasure. Sandwiched between mini graham crackercrusts and topped with chocolate Easter eggs, these personalsize delights are a delicious addition to springtime festivities.

Recipe: Mini Spring Cheesecakes

2 large eggs, separated
12 ounces 1/3 less fat cream cheese (Neufchâtel), at roomtemperature
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 packages (4 ounces each, 12 crusts total) mini graham crackercrustsTopping:
1 cup light sour cream
2 tablespoons granulated sugar
1 teaspoon vanilla extract
12 any flavor NESTL NestEggs, unwrapped

  • Preheat oven to 325°F (160°C).
  • For Filling: Beat egg whites in smallmixer bowl until stiff peaks form. Set aside. Beat cream cheeseand sugar in large mixer bowl until creamy. Beat in vanilla extract.Beat in egg yolks one at a time, beating well after each addition.Fold in egg whites. Place crusts on baking sheets. Pour fillingevenly into crusts.
  • Bake for 15 minutes or until edges areset and centers are puffed. Cool for 5 minutes. While cooling,prepare topping.
  • For Topping: Combine sour cream, sugarand vanilla extract in medium bowl; mix well. Spread over topsof cheesecakes. Bake for 10 minutes. Cool on wire rack. Refrigeratefor several hours or overnight. Garnish each cheesecake witha Nestegg.

    Makes 12 mini cheesecakes.

    Mix It Up:

    • Lemon Cheesecakes – Stir 2 tablespoonsfresh lemon juice and 2 teaspoons freshly grated lemon peel intocream cheese mixture.
    • Chocolate Cheesecakes – Stir in 3 tablespoonsNESTL TOLL HOUSE Baking Cocoa into cream cheese mixture.
    • Coffee Cheesecakes – Dissolve 1 tablespoonNESCAF TASTER’S CHOICE 100% Pure Instant
    • Coffee Granules in vanilla extract (fillingpart of recipe), then stir into cream cheese mixture.

    Totally craving a bite of one of these mini cheesecakes right now.. they are so cute and look seriously delicious! You can never go wrong with lemon and raspberry together so I can imagine how good they would have tasted. Thanks for the recipe!  for  only $8.19 for the set.  Why did I get them?  Well, Nick was ordering some text books online and he could either pay $6 in shipping or add something to his order for at least $5 dollars so I thought spending $2 extra dollars for cute and useful spring-form pans was a pretty good deal and a much better use of our money than to pay for shipping.  Right?
