Recipe: Mini Spring Cheesecakes
2 large eggs, separated
12 ounces 1/3 less fat cream cheese (Neufchâtel), at roomtemperature
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 packages (4 ounces each, 12 crusts total) mini graham crackercrustsTopping:
1 cup light sour cream
2 tablespoons granulated sugar
1 teaspoon vanilla extract
12 any flavor NESTL NestEggs, unwrapped
Makes 12 mini cheesecakes.
Mix It Up:
- Lemon Cheesecakes – Stir 2 tablespoonsfresh lemon juice and 2 teaspoons freshly grated lemon peel intocream cheese mixture.
