Mini Morsel Cupcakes recipe

Mini Morsel Cupcakes.

Perfect for taking to school on birthdays;these chocolate cupcakes are topped with creamy chocolate frostingand sprinkled with mini chocolate chips.

Recipe: Mini Morsel Cupcakes

2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups granulated sugar
1 cup butter or margarine, softened
2 teaspoons vanilla extract
4 large eggs
1 cup milk
1(12-ounce) package NESTL ® TOLL HOUSE® Semi-SweetChocolate Mini Morsels – divided use

2 1/2 cups sifted powdered sugar
1/2 cup butter or margarine, softened
1/4 cup milk
1 teaspoon vanilla extract

  • For Cupcakes: Combine flour, baking powderand salt in a small bowl. Beat granulated sugar, butter and vanillaextract in a large mixing bowl until creamy. Add eggs one ata time, beating well after each addition. Gradually beat in flourmixture alternately with milk. Stir in 3/4 cup morsels. Spooninto 24 greased and paper-lined muffin cups, filling 3/4 full.
  • Bake in preheated 375°F (190°C)oven for 18 to 20 minutes or until tops spring back when lightlypressed. Cool slightly in pans on wire racks. Remove to wireracks to cool completely. Frost; sprinkle with remaining morsels.
  • For Frosting: Microwave 1 cup morselsin a medium, microwave-safe bowl on HIGH power for 1 minute;stir. Microwave at additional 10 to 20-second intervals, stirringuntil smooth. Beat powdered sugar, butter, milk, vanilla extractand melted chocolate in small mixing bowl until creamy.

    Makes 24 cupcakes.
