Mini-Cheddar Meat Loaves recipe

Yummy mini meat loaves, infused with cheddarcheese and topped with a piquante tomato sauce.

Recipe: Mini-Cheddar MeatLoaves

1 large egg3/4 cup milk1 cup shredded cheddar cheese1/2 cup quick-cooking oats1/2 cup finely chopped onion1 teaspoon salt1 pound lean ground beef2/3 cup ketchup1/4 cup packed brown sugar1 tablespoon Worcestershire sauce2 teaspoons lemon juice or white vinegar

  • In a bowl, beat the egg and milk, stirin cheese, oats, onion and salt. Add beef and mix well. Shapeinto eight loaves; place in a greased 13 x 9 x 2-inch bakingdish.
  • Combine ketchup, brown sugar, Worcestershiresauce and lemon juice; spoon over loaves.
  • Bake, uncovered, at 350°F (175°C)for 45 minutes or until a meat thermometer reads 160°F (70°C).

    Makes 8 servings.
