Mini Apple Strudels recipe

Miniature strudels made with phyllo doughfilled with cinnamon-spiced chopped apples, walnuts and goldenraisins.

Recipe: Mini Apple Strudels

3 cups apples, tart, chopped (such asGranny Smiths)
1/2 cup granulated sugar
1/4 cup walnuts, finely chopped
1/4 cup golden raisins
1/4 cup bread crumbs, dry
1 tablespoon lemon juice
1 teaspoon ground cinnamon
8 phyllo sheets, thawed
1/4 cup margarine or butter, melted
Powdered sugar as needed
Whipped cream optional as needed

  • Mix the apples, sugar, walnuts, goldenraisins, bread crumbs, lemon juice and cinnamon together. Fold1 phyllo leaf in half crosswise; brush with the melted butter(keep the other leaves covered with a damp cloth to prevent themfrom drying). Place 1/2 cup of the apple mixture in the center,1-inch from one narrow end. Fold sides of phyllo toward the centeroverlapping the sides. Roll up beginning at the filling end.Place on an ungreased cookie sheet and brush with the meltedbutter. Repeat with the remaining phyllo leaves.
  • Bake in a 375°F (190°C) oven for30 minutes or until golden brown. Cool thoroughly, then sprinklewith powdered sugar and top with whipped cream if desired.

    Makes 8 servings.

    In fact this is not my first strudel but the first that I actually managed to photograph. One of my first posts was an apple strudel but back then I hadn t taken pictures of this complicated process and the fact that we are short on man power to help me stretch the dough was a turn off for a while until I had developed mini strudel recipes which were way more easier to handle for 1 person. Even if your dough gets a hole while rolling out, you would be able to fix it faster then with the big large strudel dough.
