Mincemeat Pound Cake recipe

Old-fashioned flavor, serve this mincemeatpound cake as is with a dusting of powdered sugar or topped withsweetened and sauteed apples and/or pears.

Recipe: Mincemeat Pound Cake

1/2 cup butter
1 1/4 cups brown sugar, firmly packed
1/3 cup granulated sugar
2 large eggs
1/2 cup buttermilk
1 cup commercially prepared mincemeat
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt

  • Preheat oven to 350°F (175°C).
  • In a large bowl, cream together butter,brown sugar, and sugar with an electric mixer until light andfluffy. Beat in eggs, one at a time. Beat in buttermilk and mincemeat.
  • Sift together flour, baking soda, andsalt. Fold into the mincemeat mixture and blend until smooth.
  • Spoon into an 8-inch greased and flouredpan and bake about 45 minutes, or until the center is set.
  • Remove from the pan and cool on a wirerack.

    Makes 9 servings.
