Microwave Raspberry Squares recipe

Sometimes you need a recipe for somethingsweet that can be ‘baked’ in a microwave for lack of a conventionoven…here’s one such recipe.

Recipe: Microwave RaspberrySquares

1 1/3 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick cooking oatmeal
1 cup brown sugar, firmly packed
3/4 cup butter or margarine
3/4 cup raspberry jam

  • Combine flour, baking powder, salt, quickcooking oatmeal, and brown sugar; blend well. Cut in 3/4 cupbutter until the mixture resembles coarse crumbs. Remove 1 cupand set aside.
  • Pat the remaining crumb mixture into a8-inch baking dish. Microwave on HIGH for 4 1/2 to 5 minutes,turning once.
  • Spread raspberry jam on top and sprinklethe reserved oatmeal mixture on top. Microwave on HIGH for 31/2 to 4 minutes, turning once.
  • Cool before cutting into squares.

    Makes 12 squares.

    Made these last night with the intention of giving them to the kids as an on-the-go snack. They were fantastic, though the kids thought they were too tart. I will try making them with another fruit maybe blueberries or strawberries and less lemon juice. I also baked them for an additional 20 min this was key to making them stay together as the filling turned jammy and held everything together. This morning they were still crisp, not soggy at all. I was wondering if you could tell me how many pints of raspberries are equal to a pound? I am not much of a baker, and I want to get the measurements correct. Does it matter if you use to many raspberries in a recipe like this?
