Recipe: Mayonnaise Cake

2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup cocoa
2 teaspoons baking soda
2 1/2 teaspoons salt
2/3 cups mayonnaise
2 cups water
1 teaspoon vanilla extract

  • Preheat oven to 350°F (175°C).Grease and flour 2 (8-inch) round cake pans; set aside.
  • Combine first 5 ingredients in large mixingbowl. Add mayonnaise, water and vanilla and mix well.
  • Pour batter into prepared cake pans.
  • Bake for 30 to 40 minutes or until woodenpick inserted in center comes out clean. Cool on wire rack for10 minutes and remove from pans. Cool completely. Frost witha creamy white-type frosting.

    Makes 10 to 12 servings.

    Note: Double recipe for a 13 x 9 x 2-inchsheet cake.

    I have never thought of using mayonnaise in baking before. But, it is ready available items in my pantry and I do not have to go buy extra stuff. I was in the mood for making chocolate cake and this recipe came out handy. Turned out wonderful very rich and dark and I will definitely make this cake again.
