A traditional recipe for your Passoverdinner. A great way to use up leftover matzo!
Recipe: Matzo Brei
2 large eggs
1/2 cup evaporated milk
1/4 cup finely chopped onion
Salt and ground pepper, to taste
4 matzos (6-inch square each)
1 to 2 tablespoons margarine or butter – divided use
Sour cream or applesauce (optional)
Makes 8 servings.
Cook’s Note: For Sweet Matzo Brei, substitute1 tablespoon honey and 1/2 teaspoon ground cinnamon for choppedonion and ground black pepper. Serve with Delicious Pumpkin AppleButter (link to recipe) or maple syrup, if desired.
