Mascarpone Melba recipe

Fresh sliced peaches are topped with adelightful mascarpone cream laced with peach liqueur and garnishedwith fresh raspberries and slivered almonds.

Recipe: Mascarpone Melba

2 cups peeled, sliced fresh peaches
1/4 cup peach schnapps liqueur
1 cup (8 ounces) Wisconsin Mascarpone cheese
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
3 tablespoons peach schnapps liqueur
1 pint fresh raspberries
Toasted slivered almonds

  • Put peaches in a small bowl. Add the 1/4cup liqueur and let stand for several hours.
  • In a small bowl, combine the mascarpone,sugar and vanilla using an electric mixer. Add the 3 tablespoonsof liqueur. Beat. Chill.
  • To serve, divide the peaches among 6 stemmedglasses. Top each with 3 tablespoons Mascarpone mixture. Sprinklewith fresh raspberries and almonds. Serve immediately.
