Marshmallow Fudge recipe

This creamy, semi-soft chocolate fudgegets its gooey sweetness from marshmallows.

Recipe: Marshmallow Fudge

1 cup milk
2 (1-ounce) squares unsweetened baking chocolate
2 1/2 cups granulated sugar
2 tablespoons light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla extract
12 large marshmallows, quartered

  • Heat milk and baking chocolate togetherin a heavy saucepan over low heat until chocolate is melted.Add sugar, syrup and salt. Cook, stirring, until mixture beginsto boil. Cover and boil for 3 minutes.
  • Uncover and cook, without stirring, untilchocolate reaches 232°F on a candy thermometer.
    Remove from heat and cool, without stirring, to lukewarm.
  • Add vanilla and beat with a wooden spoonuntil fudge thickens and loses its gloss.
  • Stir marshmallows into fudge. Spoon intoa greased 13 x 9 x 2-inch baking pan. Cut into squares when firm.

    Makes 24 pieces.
