Marble Chiffon Cake recipe

Chiffon cake has a light, airy texturelike angel food cake, but its moist, richer crumb and taste setsit apart.

Recipe: Marble Chiffon Cake

Cake:1 1/2 cups plus 3 tablespoons granulatedsugar – divided use
2 tablespoons plus 1/2 cup vegetable oil – divided use
1/3 cup unsweetened cocoa powder
1 cup cold water – divided use
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
7 large eggs, separated
2 teaspoons vanilla extract
1/2 teaspoon cream of tartar
Cocoa Glaze:2 tablespoons butter
1/4 cup unsweetened cocoa powder
3 tablespoons water
1/2 teaspoon vanilla extract
1 1/4 cups powdered sugar

  • Heat oven to 325°F (160°C).
  • For Cake: In small bowl, combine 2 tablespoonssugar, 2 tablespoons oil, cocoa and 1/4 cup water; stir untilsmooth. Set aside.
  • Stir together flour, remaining 1 1/2 cupssugar, baking powder and salt in medium bowl; add remaining 1/2cup oil, egg yolks, remaining 3/4 cup water and vanilla. Beaton low speed of mixer until combined; continue beating on highspeed 5 minutes.
  • Beat egg whites with cream of tartar inlarge bowl, with clean set of beaters, until stiff peaks form.Pour batter in thin stream over beaten whites, gently foldingwith rubber spatula just until blended.
  • Remove one-third of batter to separatebowl; gently fold in reserved cocoa mixture.
  • Pour half of light batter into ungreased10-inch tube pan; top with half of chocolate batter. Repeat layers.With narrow spatula or knife, swirl gently through batters tomarble.
  • Bake 65 to 70 minutes or until top springsback when touched lightly. Invert pan on heat-proof funnel; coolcake completely. Loosen cake from pan; invert onto serving plate.
  • For Cocoa Glaze: In small saucepan overlow heat, melt butter. Stir in cocoaand water. Cook, stirring constantly, until mixture thickens.Do not boil. Remove from heat.
  • Stir in vanilla. Gradually add powderedsugar, beating with whisk until smooth. Add additional water,1/2 teaspoon at a time, until desired consistency.
  • Spread glaze over top of cake, allowingglaze to drizzle down sides.
