Lovely swirls of chocolate in a vanillacheesecake with a graham cracker crust.
Recipe: Marble Cheesecake
1 cup graham cracker crumbs
Combine graham cracker crumbs, 3 tablespoonssugar, and butter; press onto the bottom of a 9-inch springformcake pan. Bake at 350°F (175°C) for 10 minutes.
In a bowl, combine cream cheese, 3/4 cupsugar, and vanilla; beating at medium speed with an electricmixer until well blended. Add eggs, one at a time, mixing wellafter each addition. Blend melted baking chocolate into 1 cupof the batter. Spoon the batters alternately over crust; cuttingthrough with a knife to create a marbling effect.
Bake at 450°F (230°C) for 10 minutes.Reduce the temperature to 250°F (120°C) and continuebaking for 30 minutes. Loosen the cake from the rim of the pan;cool before removing from the pan. Chill.

1 teaspoon vanilla extract
3 large eggs
1 (1-ounce) square baking chocolate, melted
Makes 12 servings.
