Make-Ahead Grape Tabbouleh Salad recipe

One of the pluses about this healthy, flavorfuland delicious bulgur (cracked wheat) and grape salad is thatit is made ahead, freeing you for other things…like more toto visit with your guests.

Recipe: Make-Ahead GrapeTabbouleh Salad

2 cups boiling water3/4 cup uncooked bulgur (cracked wheat)1/4 cup fresh lemon juice1 tablespoon olive oil1 teaspoon salt1 teaspoon grated lemon peel1/4 teaspoon pepper1 1/2 cups halved California seedlessgrapes1 cup thinly sliced spinach leaves1/2 cup diced cucumber, pared and seeded1/4 cup each chopped fresh mint, parsleyand green onionRomaine leaves

  • Pour boiling water over bulgur; let stand30 minutes. Drain well; press out excess liquid.
  • Add remaining ingredients except romaineleaves; mix well. Let stand 2 to 6 hours to allow flavors toblend.
  • Serve on romaine leaves.
