Mai Tai Compote recipe

The perfect salad for a luau party! Anassortment of luscious, fresh fruit is tossed in a spirited limedressing and served in hollowed-out pineapple shells.

Recipe: Mai Tai Compote

1 medium-size fresh pineapple1 cup fresh strawberries, hulled and halved1 orange, peeled with pith removed, sliced1/2 cup seedless grapes (red or green)1 kiwi, peeled and sliced1/2 teaspoon finely grated lime peel1/4 cup fresh lime juice3 tablespoons honey1 tablespoon light rum1 tablespoon Grand Marnier or other orange-flavoredliqueur1 banana, peeled and sliced

  • Cut pineapple in half lengthwise, leavingleaves intact. Remove pulp in chunks, leaving 1/2-inch thickshells. Set shells aside.
  • Combine pineapple chunks, strawberries,orange, grapes, and kiwi in a bowl.
  • Combine lime peel and next 4 ingredients;stir well and pour over fruit mixture. Add banana and gentlytoss to coat.
  • Spoon fruit mixture into reserved shells.

    Makes 6 to 8 servings.
