Macadamia-Raspberry Cookies with White Chocolate Chips recipe

Scrumptious drop cookies laced with raspberryjam, white chocolate chips and chopped macadamia nuts.

Recipe: Macadamia-RaspberryCookies with White Chocolate Chips

1 teaspoon vanilla extract1 1/2 cup all-purpose flour1 teaspoon baking soda1/4 teaspoon salt1/3 cup butter1/3 cup packed brown sugar1/3 cup granulated sugar1/4 cup raspberry jam1 large egg1 cup white chocolate chips or choppedwhite chocolate1 cup chopped macadamia nuts

  • Preheat oven to 350°F (175°C).
  • In small bowl combine flour, baking sodaand salt. Set aside
  • In mixing bowl, cream butter and sugarsuntil light and fluffy. Add egg andbeat well. Add the vanilla and raspberry jam, mixing well. Stirin the flour until just mixed. Stirin nuts and chips.
  • Drop by tablespoonfuls onto lightly greasedbaking sheets, about 2-inches apart.
  • Bake for 8 to 10 minutes. Do not overbake.
  • Transfer to wireracks to cool. Store in airtight container.

    Makes 2 dozen cookies.
