Luscious Fudge Pie.

Rich, gooey and chocolatey, this quickand simple “pie” is a chocolate lover’s delight.

Recipe: Luscious Fudge Pie

1 cup granulated sugar
1/4 cup all-purpose flour
6 tablespoons unsweetened baking cocoaDash kosher or sea salt
1/2 cup butter, melted and cooled to room temperature
2 large eggs, beaten well
1 teaspoon vanilla extract
Lightly sweetened whipped cream or vanilla ice cream for accompaniment(optional)Chocolate syrup for garnish (optional)

  • Preheat oven to 400°F (205°C).Generously grease an 8-inch* pie pan; set aside.
  • In large mixing bowl, combine sugar, flour,baking cocoa and salt; mixing well.
  • In another small bowl, combine the meltedbutter (cooled to room temperature), beaten eggs and vanilla.Stir the wet mixture into the dry mixture and mix well by hand.
  • Spoon batter into prepared pie plate andbake for 20 minutes exactly, do not over bake. Cool onwire rack at room temperature until slightly warm before serving.
  • Serve warm wedges of pie with a dollopof lightly sweetened whipped cream or a scoop of vanilla icecream.

    Makes 8 servings.

    *If you only have a 9-inch pie pan, reducethe cooking time to about 18 or 19 minutes, pie should appeardone, but when tested with a wooden pick, it should come outwith gooey chocolate on it.

    Tips:

    • It is best not to bake this pie in darkbakeware as it can bake too quickly, resulting in a burned edge.
    • Before serving any leftover pie, reheateach wedge for about 10 seconds on HIGH in microwave to refreshand obtain that desired gooey-chocolatey texture inside.
