Linguine with Walnut Lemon Cream Sauce.

This speedy main meal is ready in lessthan 30 minutes. Zesty lemon and crunchy walnuts make this pastascrumptious! Garnish with extra grated lemon peel and walnuthalves.

Recipe: Linguine with WalnutLemon Cream Sauce

1 cup whipping cream
1 teaspoon grated lemon peel
1 pound linguine uncooked
2 tablespoons butter
1 1/2 cups sliced mushrooms
1/3 cup chopped, toasted California Walnuts
2 tablespoons freshly grated Parmesan cheese
Salt and pepper, to taste
2 tablespoons chopped fresh parsley

  • In small saucepan, stir together whippingcream and lemon peel; simmer until cream is reduced by one-third,about 15 minutes.
  • Cook pasta according to package directions.
  • Meanwhile, in large skillet, melt butter;saute mushrooms. Drain pasta and combine with cream, mushrooms,walnuts and cheese; toss lightly. Add salt and pepper; sprinklewith parsley.

    Makes 4 servings.

    Creamy, thick, and rich with lots of garlic flavour and a hint of lemon. This is my newest favourite pasta dish. The avocado works wonderfully in this recipe to create a sauce so creamy and thick, you will think there is cream hiding in there. Inspired by My Ooooo! What a fantastic way to sneak avocados in the children s meal and it s quick? I am all over this. Thanks for the inspiration, there will be an avocado shortage here, as well. Especially since I will share this recipe with my avocado loving friends!
