Lime Cream Layered Fruit Salad recipe

A delightful, lime cream layered gelatinsalad loaded with an assortment of fresh fruit, papaya, strawberries,honeydew melon and blueberries.

Recipe: Lime Cream LayeredFruit Salad

2 papayas
2 tablespoons lime juice
3/4 cup dairy sour cream
1/3 cup honey
1 tablespoon grated lime peel
1 1/2 cups whipping cream, whipped
1 pint strawberries, halved
3 cups honeydew chunks
1 pint blueberries

  • Seed papaya, reserving 1 tablespoon seeds.Peel; cut into chunks. Set aside.
  • Place reserved seeds and lime juice intoblender container. Cover and process until seeds are finely chopped.Combine lime juice mixture, sour cream, honey, and lime peel;mix well. Fold into whipped cream.
  • In 3 quart glass bowl, layer papaya chunks,strawberries, half of whipped cream mixture, honeydew, blueberriesand remaining whipped cream mixture. Garnish with additionalstrawberry halves, if desired. Serve within 4 hours.

    Makes 8 servings.

    Variation: Substitute 3 cups peach chunksfor papaya. Substitute 2 teaspoons poppy seeds for papaya seeds.

    A creamy fruit salad made with cream cheese, canned fruit, fresh fruit and sweetened condensed milk. I make this for picnics, barbeques and potlucks, it s usually the first dish that disappears.
