Les Freres with Carrot and Apple Salad.

A tangy salad of julienned carrots andBraeburn apples with caraway seed served with a slice of LesFreres, a rich cheese with an earthy, fruity flavor thatpairs wonderfully with this salad. Recipe by Chef Scott Johnson.

Recipe: Les Frereswith Carrot and Apple Salad

8 ounces (3 to 4) carrots, peeled, cutinto julienne strips
2 Braeburn apples, peeled and cut into julienne strips
2 ounces (scant 1/4 cup) extra virgin olive oil
1/2 ounce (2 tablespoons) cider vinegar
1/2 teaspoon caraway seeds
Salt and pepper to taste
6 ounces Wisconsin Crave Brothers Les Freres cheese, cutinto 4 slices

  • Preheat oven to 350°F (175°C).
  • In large bowl, combine all ingredientsexcept salt, pepper and cheese. Season to taste and arrange on4 serving plates.
  • Warm the cheese in the oven for about2 minutes, just until the cheese begins to melt. Remove cheeseand place a slice on top of the carrot and apple salads.

    Makes 4 servings.
