Layered Chocolate Peanut Diamonds recipe

A rich peanut butter crust is topped bysweetened cream cheese and a thin layer of melted chocolate andchopped peanuts. This will quickly become a favorite in yourhouse!

Recipe: Layered ChocolatePeanut Diamonds

1/3 cup butter, softened
1/4 cup creamy peanut butter
1 1/4 cups all-purpose flour
3/4 cup firmly packed brown sugar
1 (8-ounce) package cream cheese, softened
1/4 cup honey
2 tablespoons all-purpose flour
2 tablespoons firmly packed brown sugar
2 large eggs
1 1/2 cups peanuts, chopped, divided use
2 cups semisweet chocolate chips, melted

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, beat butter andpeanut butter until combined. Gradually add flour and brown sugar;beating until smooth. Press evenly into a 13 x 9 x 2-inch bakingdish and bake about 15 minutes or until lightly browned.
  • In a separate bowl, combine cream cheese,honey, flour and brown sugar; stir until smooth. Add eggs, beatinguntil just combined. Stir in 1 cup peanuts and pour over bakedcrust. Bake 15 minutes or until set.
  • Sprinkle chocolate chips on top and bakeabout 2 minutes to soften. Spread evenly with a knife and sprinklewith remaining peanuts on top. Allow to cool before cutting intodiamonds.

    Makes 18 bars.

    Melissa, I made this for filling a chocolate cake this week, adding mini chocolate chips, and it was fantastic! Everyone said it was the best chocolate peanut butter cake they d ever had. It was delicious! Thank you so much for the recipes! I have a very big cake coming up, and the client requested a chocolate cake with peanut butter buttercream filling. The catch is that they want it decorated as a green brontosaurus, which means that I need to cover it with vanilla buttercream. Is that way too many flavors in one bite? Any opinions would be hugely appreciated!!
