Layered Banana Pudding recipe

Layered Banana Pudding.

No pudding mix used here, but definitelyworth the effort! An old-fashioned, delicious and comfortingdessert to serve family or guests.

Recipe: Layered Banana Pudding

1/3 cup all-purpose flour2/3 cup firmly packed brown sugar2 cups milk2 large egg yolks, beaten2 tablespoons butter1 teaspoon vanilla extract1 cup heavy cream, whipped4 to 6 firm bananas, slicedAbout 3/4ths of a 12-ounce box of vanillawafersToasted chopped walnuts for garnish

  • In a medium saucepan, combine the flourand brown sugar; stir in milk. Cook and stir over medium heatuntil thickened and mixture comes to a boil, cook and stir 1minute more.
  • Remove from heat. Gradually stir about1 cup hot mixture into egg yolks and return all to the saucepan.Bring to a gentle boil; cook and stir for additional 2 minutes.
  • Remove from heat; stir in butter and vanilla.Cool to room temperature, stirring occasionally. Fold in whippedcream.
  • Layer a third of the pudding in a 2-quartglass bowl; top with half of the bananas and half the vanillawafers. Repeat layers. Top with remaining pudding. Sprinkle withchopped walnuts, if desired.
  • Cover and chill at least 1 hour beforeserving.

    Makes 8 servings.

    Into a large bowl or trifle dish, add a layer of vanilla wafers, a layer of sliced bananas, and top with pudding. Add the whipped cream and then repeat the layers. Garnish with crumbled cookies on top.
