Lamb’s Wool Or Wassail Bowl recipe

Apple cider and sherry spiced with cinnamonand nutmeg.

Recipe: Lamb’s Wool Or WassailBowl

3 large cooking apples
1 tablespoon packed brown sugar4 cups apple cider
2 cups sherry1/4 cup granulated sugar
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
3 to 4 thin slices of lemon

  • Heat oven to 350°F (175°C).
  • Core the apples and arrange them in ashallow pan. Sprinkle the brown sugar and bake until the applesare tender (20 to 25 minutes). Set aside.
  • Heat the cider in a saucepan over lowheat, bringing it up to a boil. Add the sherry, sugar, spicesand lemon slices. Stir until the sugar dissolves, then covertightly and let stand over very low heat for 3 or 4 minutes.Do not boil.
  • Remove the lemon slices and pour intoa punch bowl. Garnish with baked apples.

    Makes 6 servings.
